Care Community

Not everyone is called to be a foster parent, but there are countless ways you can support those who are. Being a part of a Care Community means rallying around a foster family by providing meals, babysitting, emotional support, and so much more.

Food encourages, heals, revives, and brings joy. Providing a meal for a family is an easy yet powerful way to give love and show support.

Consider making a freezer meal for a foster family in our church or community. We are collecting frozen meals in the lobby May 16 & 19 for Fostering Hope to give to foster families in our community. Below you will find recipes for meals that kids all the way up to adults will enjoy. Please label the lid with the name of the meal, date prepared and cooking instructions.

Chicken Casserole

Makes one 9×13 pan

Ingredients:

  • 2 cups shredded cooked chicken
  • 3 cups of cooked rice
  • 1 can of cream of chicken condensed soup
  • 1/2 cup of chicken broth
  • 1 bag of frozen peas and carrots
  • 1/2 Tablespoon of salt
  • 1/4 Tablespoon of black pepper
  • 1 1/2 cups of french-fried onions
  • 2 cups of shredded cheddar cheese

Directions:

1. In a small bowl, combine the cheese and onions together – set aside (for the topping)

2. In a large bowl, combine the rest of the ingredients together, then pour into a 9×13 pan.

3. Sprinkle on the topping mixture. Cover and place in the freezer.

Baking instructions to pass along: Bake at 350 until heated through.

Chicken Enchiladas

Makes one 9×13 pan

Ingredients:

  • 3 cups cooked and shredded chicken
  • 3 cups shredded cheddar cheese
  • 10 medium flour tortillas
  • 2 cans red enchilada sauce

Directions:

1. Mix 1 cup cheese, chicken, and 1 can red enchilada sauce in a bowl.

2. With a large spoon, fill each tortilla with the mixture. Roll them up and place 10 in each greased baking dish with seams down.

3. Pour the remaining cans of enchilada sauce over the top of each pan.

4. Top with remaining cheese. Cover and place in the freezer.

Baking instructions to pass along: Bake at 350 until heated through.

Tex-Mex Chicken Casserole

Makes one 9×13 pan

Ingredients:

  • 2 chicken breasts, cooked & shredded
  • 4 cups of cooked rice
  • 1 can of Rotel tomatoes, drained
  • 1 pack of taco seasoning
  • 1 can of whole kernel corn, drained
  • 1 can of black beans, undrained
  • 3 cups of cheddar cheese, grated

Directions:

1. Mix together all of the ingredients in a bowl, except the cheese.

2. Pour the mixture into a greased 9×13 pan, then top with the cheddar cheese.

2. Cover and place in the freezer.

Baking instructions to pass along: Bake at 350 until heated through.
